These teas are unique because they rely on the natural interaction between tea plants and a small leafhopper insect (Jacobiasca formosana). These insects nibble on the tea leaves, triggering a natural defense mechanism in the plant that produces complex aromatic compounds. This process gives these teas their distinct honeyed sweetness and unique flavor profile. The presence of these leafhoppers is a clear indication that no synthetic pesticides are used, as these chemicals would eliminate the insects and prevent the development of these prized flavors. This natural interaction is a testament to the healthy ecosystems our farmers maintain in their tea gardens.
